🍗🍆 ROASTED CHICKEN THIGHS & VEGGIES:

Searing & Veggie Base. Melt 20 g (0.7 oz) butter with olive oil and sear 6 chicken thighs on both sides until golden, seasoning with salt and pepper, then set aside. Salt coarsely chopped eggplants and rest for 10 minutes to remove excess moisture and bitterness, then pat dry. In the same pan, fry potato chunks until crisp, then stir in sliced carrot, onion, leek, dried eggplants, tomato, and 3 minced garlic cloves. Season with Italian herbs, smoked paprika, salt, and pepper, cook for 3-4 minutes, and remove from heat.

Glaze & Roasting. Place the chicken thighs on top of the vegetables and bake at 200°C / 390°F for 40 minutes total. Meanwhile, whisk tomato paste, honey, apple cider vinegar, Dijon mustard, 1 grated garlic clove, soy sauce, olive oil, and black pepper. After 25 minutes, remove the pan, brush the chicken generously with the glaze, and return to the oven for the final 15 minutes to caramelize. Garnish with freshly chopped parsley before serving.
