Hi guys! Hello everyone! Welcome to my kitchen, Alla's Yummy Food.
I'm Alla, the host of the show, Love Dian.
Today I'm going to show you how to make these delicious,
fluffy chocolate vatrushki.
Vatrushki are really amazing buns stuffed with cream cheese
and cottage cheese filling.
They're so amazing!
I decided to make these with a chocolate
cottage cheese cream cheese filling
and a hidden chocolate scent for those who are obsessed with chocolate.
I absolutely love them.
They're so popular all over Eastern Europe, Russia, Latvia and all the
Baltic states. It was actually my childhood sort
of snack that I used to get at school
and I really wanted to show you how to make the chocolate version
because I love chocolate
sometimes. Guys, you can get access to all
my recipes just below this video on my website.

Let's get baking!
Into your jug, add lukewarm milk and make sure it's not hot or cold.
Then add half of your sugar mixture,
mix everything through and then add your dry yeast.
You can use instant yeast or dry yeast,
whichever yeast you have at home.
Mix it through and we're going to leave it aside to activate.
Once your yeast has activated you want to add your eggs,
sour cream and melted
cold butter. Make sure it's unsalted.
Mix everything through and then lastly add
vanilla extract.
Now over here I've got my flour and the remaining sugar and a
little bit of salt. I'm just gonna start mixing it
with a dough hook in my
attachment and slowly adding my wet mixture. Don't forget to use your
spatula and go around the sides
as the flour usually gets stuck there. Keep
mixing as you add your wet mixture.
By the way guys I'm making a double portion
here so you don't need to make this many it makes
a lot a lot a lot so I'm gonna
give you half of the ingredients for this recipe.
So keep adding your flour a
little bit at a time until your mixture is all incorporated.
The dough will be
very, very soft and sticky, just like this.
Use oiled hands or wet hands or floured hands to get
rid of your dough from your hook
and then add a little bit of flour onto your counter and you
want to knead your dough by hand a couple of more times.
Keep adding lots of flour as you roll it
out as the dough is still sticky so you will need more.
Don't over add the flour though as the dough
will become very, very starchy.
Once the dough is nice and folded a couple of times, as I said,
it will still be sticky. Don't worry about it.
You will need to leave it to proof. So add a little
bit of oil into your bowl and add your dough.
You're going to add cling film over the bowl
to make sure that the yeast can raise
and leave it in a really nice warm place. While our dough
is raising. We're going to make
our delicious cream cheese chocolate filling.
So in a bowl add your
cream cheese together with cottage cheese.
I'm using dry cottage cheese so make sure you use
the dry one. You can also use ricotta, quark or farmer's cheese.
Then add vanilla extract, sugar
and egg. And then you want to add your cocoa powder,
unsweetened, and melted dark chocolate.
Then I'm going to blitz everything.
If you don't have a hand blender, just use your whisk or your
hands and just make sure everything is nice and smooth.
You want to do this until all the
ingredients are incorporated and the mixture is nice and chocolatey,
just like this. After about
hour and a half my dough has risen
and pretty much tripled in size I'm just
gonna flatten it out it is very very soft
and sticky dough it's easy to work
with but you do need to make sure you flour
your surface all the time now take
your dough and divide it into even amount of pieces I make sure they're
good decent size like
so and I'm gonna bake 12
at a time once you rolled out
your little balls you want to leave it to raise for about half an hour.
Then after that you want
to oil a smaller glass or something that you can press inside
because we're going to be adding our
filling in there. So just oil your glass
if it becomes sticky again you can just spray a little
bit of cooking oil on the back
and just keep pressing inside each dough creating a nice little
hole. Then take your chocolate filling
and you want to add a large tablespoon even two of the
filling inside each vatrushka
and just keep going until you fill all of them. What I like to do I
like to add a little bit of Nutella in there
so add a teaspoon of Nutella that I put on top and
I also like to add chunks of dark chocolate around.
What I do I just push a little bit of chocolate
right inside in the middle
and then i top it up with more chocolate mixture on top to hide the
nutella and chocolate then you want to go around
with your egg wash and make sure you go around
all the edges and around the sides this will give
our vatrushki a very beautiful golden color
once they're all done we're going to bake them
and you want to make sure they come out nice and
golden trust me it's going to be in your house
the smell is so amazing once they're done you
want to take them out look at them aren't they amazing uh you want
to leave them to cool down
completely on the cooling rack so stack them up
and one secret i want to give you is to butter
them that way they will keep their shine
so take a little bit of soft butter and put it onto your
pastry brush and then just go around each pastry
and brush it over lastly you want to add a little
bit of icing sugar on top and voila your chocolate trushki are done i'm
so excited to show you how
they look inside once you cut inside the dough is so soft
so airy crunchy on the bottom and just
look at that gooey chocolate inside
so delicious absolutely amazing for anyone who loves chocolate
I really hope you make this recipe. Enjoy!
