This gorgeous Russian Easter bread, or kulich, is a light, fluffy, lightly sweet bread flavoured with dry blueberries, cranberries, and chocolate chips. This recipe is more for those who don't like to fuss around with yeast and wait, this paska bread is more crumbly, buttery, a cross between a cake and a muffin. This paska bread is mainly from tvorog ( Russian cottage cheese, but you can replace it with cream cheese, ricotta cheese, quark, or farmers cheese). This bread also requires no yeast, which makes it a super quick and easy recipe for those who want a last-minute paska bread.
Paska (паска) bread or Kulich (кулич) bread is a Russian and Ukrainian festive bread baked at Easter and is traditionally eaten only on Easter Sunday. The kulich would sit proudly in the center of the family Easter basket, surrounded by meats, cheeses, butter, and eggs. It's a central part of the Easter meal. This is not to be confused with another festive Easter dish called Paskha (Пасха), which is made mainly with tvorog (farmer’s cheese).
Hi guys! Всем привет!
Welcome to my channel Alla's Yummy Food. I'm so excited.
We celebrated Easter last weekend but I know it's Russian Easter
coming up this weekend so I created another Pascha recipe for you.
So these are mini kulich bread and this one doesn't require any yeast.
I know it's kind of difficult times right now
so most people can't even find yeast.
So this recipe is very very easy to make. You don't need
to have a lot of time to prepare it and you can have beautiful
Pascha breads for your Easter celebration.
I also made them in mini Pascha sort of shape but you can
make two big ones. I will leave all the measurements
and everything in the recipe. Yeah guys, I really
hope you enjoyed. It's really, really delicious,
very fluffy, very soft and just very, very like
celebratory. All the aromas from lemon and orange,
cranberries, they just come together so amazingly
and I love to eat Pascha bread with butter
and a bit of jam but that's just
me you can get access to all my recipes just under
this video there is the link
and you can become a member today
and you will get access to all my video
recipes plus all the new ones that are coming out
so guys what are we waiting
for let's get cooking in a bowl add eggs
then add sugar and we're going to whisk
everything for good 5 to 7 minutes.
We really want to whisk the eggs together
with sugar until they're pretty much triple in size.
Your cue is for your eggs
to become nice white and fluffy.
That's when you know that they're done. So keep
whisking. This process takes a while
but you can see how my eggs are changing and
becoming nice and fluffy and really really white in color.
You then want to
add your vanilla extract and cold melted butter.
Mix everything together until it's nice and
smooth. Then take your cottage cheese and add inside your mixture.
You want to whisk everything
one more time. Then you want to take your flour
and I like to sift it every time I add it. So I'm
going to add two tablespoons at a time.
You want to add flour in stages so you don't over whisk the
mixture and so you incorporate all
the flour in there.
Then I'm going to add my orange and lemon
zest and trust me this really really adds a lot
of flavor to these delicious mini bread Paschas.
Over here I've got a mix of my fruits, nuts,
dried blueberries and cranberries together with some
chocolate chips. I really wanted to add chocolate chips in there
because they add this insane amount
of flavor and it just feels like something naughty
when i'm adding my last amount of flour you want
to mix it through just enough until the mixture
is incorporated don't over mix otherwise that
will be very tough and your mixture should
be quite uh runny like a sour cream consistency
so once everything is mixed through prepare
your molds like i mentioned in the video you can use
two large um like molds uh or you can use 10 mini
ones basically depends on your molds that you use
you always want to fill the mixture uh not all the way to the top
so about two-thirds of the way
as they are going to rise now we're going
to bake them at 180 degrees celsius or 350 fahrenheit
and i'm going to show you how they look
when they're done they smell absolutely incredible
it's the easiest pasta recipe i have on my channel
so i really hope uh you will enjoy it
it is really important to leave them to cool down completely
so put them on a cooling rack
and i do like to decorate them with a bit
of icing sugar just to give it a nice pretty
festive look aren't these amazing i really like the mini ones as well
because everyone gets
one portion or they can share one
and i'm just going to show you how soft and fluffy it is inside
it cuts through really well they keep still moist
um up to two three days if they're wrapped in
cling film and then covered with a towel
but just look at that you've got really nice crunchy topping
very soft gooey middle and they're
so delicious full of flavor i love them with jam and butter
you can have them on their own with a bit of tea or coffee
they're perfect for the holiday festive season
and I really hope you make these
