TCU Horned Frogs taking on the West Virginia Mountaineers.
And whether you're in it for the touchdowns or the tailgating,
TCU Dining says fans deserve flavors as bold as their team spirit.
Joining us this morning, Chef Mike Smith,
the Director of Culinary for Sodexo at TCU.
Thank you so much for being here.
Thank you for having me.
You guys get so creative.
You had those purple corn dogs that went viral.
Now we're talking about purple sweet potatoes.
What are you going to be making for us?
Today I'm going to be making something
that's going to be shown in our Love Street Club.
It is a purple sweet potato with a Japanese ginger
Kombu sauce, and it's going to have lobster
and furikake and a crispy leek salad.
And then fancy, fancy, fancy, forget just the corn dog.
I mean, we're stepping it up.
So what do you got going on, on the stove right now?
So what we do, we're cooking some lobster right now
in miso butter and we've already roasted our sweet potato.
It takes about an hour.
We put it in our smoker and then we're going to cover it
with a little bit more potato curry.
So did it come, it's a purple potato.
Yes.
And then now you've done a puree with the purple potato.
So you're doing the purple on top of the purple.
Okay, that is awesome.
We scoop that out and then we add
a little bit more potato into it.
Okay.
Then we top it with a kombu cream.
Kombu is like a seaweed, a kelp
that is indigenous in the Japanese area.
This is fun.
Is it sweet?
It is, it's got a very like seaside flavor.
It gives you a sense that you are at the ocean
and it's really evocative of that.
Okay, which makes sense with the lobster that we've got going on.
Okay.
Then we top it with this miso butter lobster.
And you're just going to keep building on top
of this because apparently that seems to be your thing.
Bigger is better, right?
Bigger is better at TCU football, that's for sure.
Okay, what is that now?
This is chive oil.
Chive oil, okay.
And then?
Then we have furikake, which is another seaweed.
You were talking another language.
fun and then we top it with a crispy leek salad crispy leeks
on top of that beautiful
and then the uh ingredient that really sings
are these spicy wasabi peas on top of that so that
gives you a little heat you just need to get a fork
and mix it all up and and get in there i
guess you just have to jump in you have
to ask you we have a couple of the other items on display
here that you guys are selling this year as well
in that in the luxury area as well these two items
are in our concession stand okay
so anyone can can get their hands on this if they can figure
out how to eat this is a mungo burger
this is our stampede burger this is only going to be
available at this game oh
and this is uh two beef patties okay brisket texas chili caramelized
onions queso pickles and it is breakfast lunch
and dinner and a midnight snack what's your advice
on how to eat it you need a knife
and fork not eat the day before okay and then to get in there
with a knife and fork and just enjoy yourself
and split it with some friends okay this is something
that is super cool and this is something people can buy
so we've got the TCU cup and you're going
to go ahead and pour i'll show you how
this activates when you get your cold
drink and you get your cup you pour it
in that lights up the cup put it next to my microphone
look at the purple lights how fun that's a great thing
so those are available in our concession
stands as well and i hope everybody comes
by and gets them it is an experience not going to a
football game it's not just football anymore i feel
like now we've got food we've got entertainment
we've got treats i mean it really is just
a special special it's like a day at the state
fair it should be a little something for everybody
and entertainment throughout the day it's about
football but it's something else to to make your day really special
when you get really creative
with the food. You must take a lot of pride in that.
We do. We're very proud to show it to people
and have people come back and tell us they really loved it.
And even to talk about the purple corn
dog a year later, it's very meaningful to us.
So we really appreciate that. And now the purple
potato is going to take over. All right. Check it out.
TCU Horned Frogs taking on West Virginia
