Meal Prep, But Make It Vietnamese

Asian cuisine recipes

Meal prep does NOT have to mean eating the same boring meal five days in a row! In this video, I’m showing you how I use a simple mix-and-match meal prep system to turn just a few basic ingredients into 9 completely different meals for the week.

Think of it like culinary LEGO: prep your rice, noodles, bread, fresh veggies, pickles, scallion oil and nước chấm, then mix and match them with different proteins to create Vietnamese-inspired rice plates, noodle bowls and bánh mì.

Here’s how to make the Viet essentials (pickled carrots and daikon, scallion oil and nước chấm: • 5 Essentials to Unlock Vietnamese Cooking ...

For this week’s meal prep, we’re making:

🍖 5-Spice BBQ Pork (Xá Xíu)
→ Cơm Xá Xíu (BBQ Pork on Rice)
→ Mì Xá Xíu Khô (BBQ Pork on Dry Egg Noodles)
→ Mì Xá Xíu (BBQ Pork Noodle Soup)
→ Bánh Mì Xá Xíu (BBQ Pork Bánh Mì)

🍗 Vietnamese Lemongrass Chicken
→ Cơm Gà Nướng (Lemongrass Chicken on Rice)
→ Bún Gà Nướng (Lemongrass Chicken Vermicelli Bowl)
→ Bánh Mì Gà Nướng (Lemongrass Chicken Bánh Mì)

🐟 Gochujang-Glazed Salmon
→ Cơm Cá Hồi (Gochujang Salmon on Rice)
→ Bún Cá Hồi (Gochujang Salmon Vermicelli Bowl)

I’m also sharing some of my favourite meal-prep tricks, including how I keep fresh vegetables crisp, how I turn leftover pork drippings into an incredible sauce, and how one noodle prep can be eaten dry-style OR turned into a quick noodle soup.

If you’re tired of boring meal prep, try thinking in building blocks instead of complete meals. Prep a few versatile proteins and Vietnamese essentials once, then mix and match them throughout the week. Same prep, completely different meals.
