Kale, Three Japanese Ways | Traditional Japanese Side Dishes

Kale isn’t a common vegetable in Japanese home cooking, but today I’m using it to make three Japanese side dishes.
Here in London, I don’t always have access to Japanese greens such as komatsuna or the large-leaf spinach commonly used in Japan, so I tried using kale as an alternative.
In this video, I make sesame-dressed kale, kale with a miso-vinegar dressing, and atsuyaki tamago, a Japanese thick omelette. For the omelette, I’m trying a simpler method: folding the egg instead of rolling it.
Even when Japanese vegetables aren’t available, you can still make Japanese home-style dishes with ingredients you can find locally.
That’s what I wanted to explore in this video.
