5 Minute Chinese Fish Fillet Stir Fry with Ginger and Scallions

DESCRIPTION
Tender fish fillets stir-fried with ginger and scallions in under 3 minutes—from wok to plate
This quick Chinese home-style dish uses only a few seasonings, allowing the natural freshness of the fish to shine. The ginger and scallions add fragrance without overpowering its delicate flavor
INGREDIENTS
• Fresh firm white fish fillets
• Fresh ginger, sliced
• Scallions, cut into sections
• Salt
• White pepper
• Cooking oil
• Water
• Light soy sauce
• Fish sauce
• Cornstarch slurry
INSTRUCTIONS
1. Marinate the fish fillets with salt and white pepper. Mix gently until evenly seasoned
2. Heat oil in a wok or frying pan. Add the ginger slices and stir-fry until fragrant
3. Add the fish fillets and gently toss over high heat. The fillets should begin curling as soon as they hit the hot wok
4. Add the scallions, followed by a splash of water, white pepper, light soy sauce, and fish sauce
5. Keep the fish moving gently to avoid breaking the delicate fillets
6. Drizzle in the cornstarch slurry. Toss briefly until the sauce turns glossy and lightly coats the fish, then serve immediately
COOKING NOTES
• I used fresh snakehead fish, but another firm white fish can also work
• Handle the fillets gently because they become delicate as they cook
• Keep the heat high and work quickly to preserve the fish’s tender texture
• The fish is ready when the fillets are opaque, curled, and just cooked through
