Sift together flour, baking powder and pumpkin pie spice. In a separate bowl, whisk together pumpkin puree, brown sugar, egg, milk and butter. Add a little orange food coloring for extra color. Dump dry goods into wet and whisk until just combined. Allow to sit for five minutes to hydrate. If you want to make jack o lanturns, take 1/2 cup of the batter and dye it black. Pour it into a squeeze top container. Add a little butter to a non-stick griddle set to medium heat. Wipe it down with a paper towel until no butter is visible. Draw faces with black batter. Allow to cook a minute or two. Ladle on 1/3 cup of orange batter over it. Once bubbles creep up, flip. Cook for another minute or two and put on serving plate or store in an oven set to 200 degrees to keep warm. Serve on a plate with plenty of butter, maple syrup or pumpkin spice syrup.
Pumpkin pancakes, and we're gonna make them
look like cute little jack-o'-lanterns.
First, let's combine our dry goods in a bowl.
Flour, baking powder, pumpkin pie spice, salt.
Whisk them together until they're combined.
Now the wet stuff. An egg, brown sugar, melted butter, milk,
pumpkin, and some bright orange food coloring. Whisk to combine.
Now dump your dry mixture onto your wet
and whisk until just combined. If you over mix it,
you're gonna have really yucky tough pancakes.
If there's a few lumps, it's gonna be okay.
When it's just combined, let it sit for five minutes.
In the meantime, let's make some syrup
for the top, which is just equal parts maple syrup
and pumpkin spice syrup. Set that aside!
Now take your batter and put it into something with a pour spout,
like a large measuring cup.
It'll help us make perfectly round pancakes.
Also, if you're gonna be making jack-o'-lantern
pancakes, stir in some black dye into about half a cup of your batter
and pour that into a squirt
bottle. I like using an electric griddle for my pancakes,
but you can use any nonstick surface
on medium heat. Brush the surface with butter,
and then wipe it down with a paper towel. Careful,
it's hot. Okay, now using your squirt bottle,
draw whatever face you want your pancake to have.
Sky's the limit. Once it cooks for about a minute,
pour some orange batter directly into the center.
It will pour out perfectly.
Flip the pancake when bubbles start creeping up, and cook for another
minute or two. Then evacuate to a plate while you make the rest.
This one's cute as heck. Oh man,
this one's spooky. I think this one's hitting on me.
I don't care for that. Ooh, this one's fun
and prankish. This one's mean. Let's eat them, yeah?
Stack a few on a plate as high as you want,
top it with some whipped butter,
and drizzle on some of that yummy syrup. Now we can eat
the heck out of these cuties. Spooky and delicious.
