***Pork Collar Charcutière***

■Ingredients: 2 servings
◯Pork loin or pork collar 250~300g
[A]Salt 3g
[A]Coarsely ground black pepper
[A]Cake flour
[B]Butter 20g
[B]Onion 1/2
[B]Salt a pinch
◯Tomato 1/4
[C]White wine 200ml
[C]Cornichons (pickles) 20g
[C]Wholegrain mustard 3 tsp
[C]Salt a pinch
[C]Coarsely ground black pepper
◯Butter 20g
◯Italian parsley

■Instructions
[Prep]Make cuts into the connective tissue of the pork collar. Thinly slice the onion, dice the tomato, and slice the cornichons into rounds.
①Dust both sides of the pork with [A].
②Add oil (not listed) to a frying pan, heat over medium heat, add ①, and sear for 2 minutes. Quickly sear the other side and remove.
③Add [B] to the same pan and sauté over medium heat until the onion turns golden. Add the tomato and cook together until broken down.
④Add [C], bring to a brief boil over medium heat, return ② and the butter to the pan, and simmer for 1 minute.
⑤Spread mashed potatoes on a plate and pour over the sauce. Top with the sliced pork and garnish with parsley.

***Mashed Potatoes***

■Ingredients: 3-4 servings
◯Potatoes 300g
◯Butter 30g
◯Milk 100mL
[A]Grated cheese powder 15g
[A]Salt 3g
[A]Coarsely ground black pepper

■Instructions
①Place potatoes in a pot and add just enough water to submerge them. Simmer over low heat until the potatoes are tender.
②Remove the potatoes and peel the skins.
③Discard the hot water, return potatoes to the pot, and mash with a masher until smooth and paste-like.
④Add butter and gently mix. Add milk and stir while heating over low heat. Add [A] and adjust seasoning to taste.
