Ingredients (Serves 2-3)
500g potatoes, peeled and cut into small chunks
60g potato starch
1 pinch of salt (for potato mixture)
2 green onions, chopped (divided)
4 garlic cloves, minced
½ red bell pepper, diced
2-3 bird’s eye chilies, minced (optional, for heat)
1 tsp oyster sauce
½ cup (120ml) hot water
½ tsp salt (for sauce)(abt 2g Chinese tsp )
1 pinch of chicken bouillon
1 tbsp light soy sauce
½ tsp sugar (abt 2g Chinese tsp )
Cooking oil 2tbsp

Instructions

Grab 500g potatoes, peel, chop.

Place potato chunks in a steamer. Cook over medium-high heat for 15-20 minutes until tender.

While potatoes steam, prep aromatics: chop green onions, mince garlic, dice red bell pepper, and mince bird’s eye chilies (if using). Set aside.

Transfer cooked potatoes to a bowl. Add 1 pinch of salt and potato starch. Mash well and mix thoroughly.

Take small portions of the potato mixture (about 40g each) and roll into balls.

Gently press each ball with a clean wine bottle to form a mushroom cap shape (press lightly to avoid breaking).

Steam the shaped potato mushroom bites again for 6 minutes. Remove and set aside.

Heat cooking oil in a skillet over medium heat. Add half the chopped green onions, garlic, red bell pepper, and bird’s eye chilies (if using). Sauté for 1-2 minutes until fragrant.

Stir in oyster sauce. Pour in hot water, then add ½ tsp salt, chicken bouillon, light soy sauce, and sugar. Mix well to combine.

Add the steamed potato mushroom bites to the sauce. Simmer for 2 minutes, tossing gently to coat evenly.

Garnish with the remaining chopped green onions. Serve hot with rice (optional).
