Rainy Autumn Day in The English Countryside 🍂 slow living in autumn, baking apple pie 🍎
Spend a slow rainy autumn day in the English countryside with me - exploring atmospheric English villages, cozying up with tea and a good book, baking an apple pie 🍂
Apple Pie recipe:
Crust:
100g butter (cubed and cold)
200g plain flour
pinch of salt
dash of cold water (2-3 tbsp)
Chop butter into cubes and place into freezer for 10 minutes.
Combine flour, salt and cold butter in a bowl, coat butter with flour and start rubbing by hand until it forms into chunky crumb. Then add water (start with 2 tbsp first) and mix using a table knife in cutting motions until a smaller crumb forms. Start mixing by hand and shape the dough into a ball. At this point if your dough isn't shaping too well you may want to add another tbsp of cold water.
Once shaped into a ball, place into the fridge for about 1h.
Pie filling:
1kg apples
50g butter
100g sugar
2 tbsp maple syrup (optional)
juice of 1/2 lemon
lots of cinnamon
Peel and remove apple cores, chop into chunky cubes. Place into a large saucepan, add butter, sugar, lemon juice and cinnamon. Simmer on a small heat until apples are thoroughly cooked. (You can see in my video that I cooked apples until fully disintegrated - while it tasted great, it wasn't intentional. I just forgot about them for a little while :) )
At the end taste your apples and if they're a bit too sour you can add some maple syrup as well.
Ideally wait until apples cool down.
Take the dough out of the fridge and cut off 1/4 for lattice. Roll the rest of the dough out until about 2-3mm thick. Place onto a pie tray and pierce the bottom with a fork. Ideally place a parchment with pie weights/beans on top and pre bake for 10 mins. I skipped this step.
Place filling into the crust, lay out the lattice or your desired decoration.
Whisk an egg and brush on top to make the pie more golden.
Bake for 40 mins at 180C/356F
