The presenter demonstrates how to prepare the main dish using minced chicken and vegetables, complemented by traditional sides including a quick pickled salad (acar), a fried egg, and prawn crackers for an authentic Balinese dining experience.
Om Satyastu, hello and welcome back to my kitchen. How are you? I hope you are healthy and happy.
I'm so sorry I haven't been filming for last few months. It's been a very difficult time for everyone I know and here too in Bali.
And thank you so much for all your kind messages. And here we are again. Let's go!
So today I'm going to make fried rice or we call Nasi Goreng in Bali and Indonesia.
This has to be the most popular dish in my country.
For me, I prefer to flavor my fried rice with garlic, chili, onion, soy sauce, vegetables, meat, either chicken or seafood and anything else you like.
And also later I will serve my fried rice with prawn crackers, which is I prepared earlier.
And acar is a quick Indonesian pickle, chili with soy sauce and a fried egg.
So let's make it!
First, I'm going to introduce you to all ingredients I'm going to use later.
Here I have some chilies, garlic, small chili, onion, shallot, carrot, cucumber, spring onion, and steamed rice.
Chicken breast, minced chicken breast I mean, sugar, salt, white peppercorn, red shallot, sweet soy sauce, the thick one, I have also some here.
And vegetable oil, rice vinegar, chicken bouillon powder, and 2 eggs.
So let's start make it!
First, I'm going to prepare acar, which is quick Indonesian pickle.
So now I'm going to add 1 tsp of vinegar and 2 tsp of sugar.
Pinch of salt and mix together.
And I will put this aside and I will prepare the cucumber now.
First, I will remove the seed.
I will keep later for the infused water, so nothing is waste.
And slice it.
And the carrot.
Peel the skin and slice it.
Shallot, just cut into the big chunks.
And add the small chili.
Mix well.
So let's put it aside.
Now, let's chop the chili, garlic, onion, and prepare the vegetables.
So I'm start with chopping the chilies, I mean garlic.
Finely chop.
I'm using here 2 garlic.
If you would like to use more garlic, it's absolutely fine.
Or if you want to use less garlic, it's also fine.
I'll put it aside.
Onion, chilies.
I'm using one only first.
Just slice it thinly.
If you want to skip it, also fine, but I quite like a bit spicy.
Spring onion.
And carrot.
I'm using small amount of carrot.
And I just peel the skin a little bit.
So next, let's fry the chicken.
I put the heat into medium.
I add a pinch of salt, pinch of white peppercorn, and mix well.
Let's add one tablespoon of vegetable oil.
The pan is hot enough now.
Add the chicken.
So now it's cooked, let's put it aside.
So I'll put it aside.
So add another tablespoon of oil.
Add the onion.
I put the heat a little bit high.
So I cook the onion until it's soft.
Now I add garlic.
Stir it a little bit.
Chili, carrot, spring onion.
Stir it for one minute.
I'm going to add the egg now.
First I will put a tiny pinch of salt.
And add the egg at the middle.
And now add the rice.
I turn down the heat a little bit.
Add the sweet soy sauce.
Chicken bouillon powder.
And a quarter teaspoon of salt.
Mix well.
And also I put a little pinch of white peppercorn.
This is optional.
You don't have to add it.
But I quite like this.
Have a slightly heat.
And add the chicken.
So now it's ready.
Let's plate it.
Let's put it aside now.
And next I will prepare the fried egg.
Medium to low.
And I will brush slightly oil.
I think the pan is ready.
And let's add the egg.
For the perfect look,
I will put the egg yolk in the center.
So just hold it a few seconds.
Until the white is set.
And while I'm waiting the egg is ready,
I will prepare the chili and sweet soy sauce.
First I'm going to make a little cup.
From the banana leaf.
I make two of it.
One for the chili and one for the acar.
Now I will cut this.
Here.
Now I will cut the chili.
I slice it thinly.
Put it here.
And the egg now is ready.
Let's turn off the cooker.
So now let's put all the condiments together.
So here is the fried rice.
And I'm going to add the chili.
And put a little bit of sweet soy sauce.
Put it here.
Some acar.
Some brown crackers.
Sprinkle some fried shallot.
And fried egg.
I will just add a tiny pinch of salt on the egg.
Here we are.
Nasi Goreng.
