Recipes featured in this episode:

Margarita Mix:
1 cup simple syrup
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
*mix all ingredients, and store in fridge

Simple Syrup:
1 cup water
1 cup sugar
*place water and sugar in pot, stir. Bring to a boil. Let cool.

Margaritas:
2 oz Margarita Mix
1 oz tequila blanco
*shake in shaker and pour over ice

Seasoning Mix:
4 Tbs cumin
2 Tbs chili powder
2 Tbs garlic powder
2 Tbs onion powder
1 Tbs black pepper
1 Tbs salt
1 tsp red pepper seasoning
*mix all ingredients together. Store in an airtight container



Guacamole:
4 ripe avocados
1/2 c diced onion
1/2 c diced tomatoes
1 lemon (juiced)
Salt, pepper, garlic powder (to taste)
Red pepper flakes (optional)
* Mix all ingredients in a bowl. Serve with tortilla chips

Mini burritos:
1 lb ground turkey
1 can black beans (strained)
1/2 c diced onion
2 c grated cheese (pepper jack/ cheddar)
1 can enchilada sauce
16 flour  soft shell tacos
2 Tbs cumin
Salt , pepper, and garlic powder to taste

1. Brown meat in skillet. Add onion and black beans. Continue to cook until onions are soft. Season with cumin, garlic powder, salt and pepper.

2. Place 2 Tbs of meat mixture on shell and spinkle cheese mixture on top. Roll into a burrito

3. Place burritos into a baking dish. Cover with enchilada sauce. Bake at 350 degrees for 10-15 mins.

Stuffed Jalepenos:
8 Jalepenos (cut in half and seeds removed)
1 pk. cream cheese
2 c shredded cheese (pepper jack/cheddar)
1 tsp cumin
1/2 c real bacon bits
Salt, pepper, garlic powder to taste

1. Place sliced Jalepenos in a baking dish
2. Mix all cheeses together, and season to taste.
3. Fill each pepper with cheese mix. Top with bacon bits. Bake in 350 degree oven for 15-20 mins.

Elotes:
1 pk frozen corn
1/2 pk cojita cheese
1/4 c mayonnaise
2 Tbs butter or margarine
Juice of 1 lime
Salt, pepper, garlic powder to taste
Tajin

1. Cook corn according to package
2. Add rest of ingredients (except Tajin)
3. Stir until all ingredients are incorporated
4. Serve and garnish with Tajin on top
