
Whole-Wheat Chocolate Sandwich Cookies | My Secret Recipe!

[Ingredients · Makes 12–15 Sandwich Cookies]
Unsalted butter ··· 70g
Granulated sugar ··· 32g
Salt ··· 1g
Egg yolk ··· 18g
Cake flour ··· 95g
Cocoa powder ··· 10g
Whole-wheat flour ··· 18g
Dark chocolate ··· as needed
[Baking Time]
165°C (330°F) / 15 minutes
[Instructions]
① Mix the unsalted butter, sugar, and salt until well combined.
② Add the egg yolk and mix until smooth.
③ Sift in the cake flour, cocoa powder, and whole-wheat flour. Mix until a dough forms. Roll the dough out to 3mm thick, then refrigerate for 2 hours.
④ Cut out the cookies using a fluted cookie cutter. Bake in a preheated oven, then transfer to a wire rack and leave to cool completely.
⑤ Melt the dark chocolate and pipe it onto half of the cookies. Top with the remaining cookies to make sandwiches. Refrigerate for 15 minutes, or until the chocolate has set. Enjoy!
