
Fig Trees: Does Your Fig Variety Need Pollination? Here's How to Check

In this video, I share my practical techniques for evaluating fruit quality, managing orchard microclimates, and optimizing yields across containerized and in-ground trees. Determining actual ripeness requires feeling the neck of the fig for softness rather than touching the bottom or relying solely on skin color, as underripe figs taste subpar—with rare exceptions like Dottato, which stays sweet even when picked early. In this video, I inspect early-season Breba crops (the first harvest produced on previous year’s wood), including a local city variety featured in my documentary The Fig Boss of Philadelphia and the Paternoster fig. I also explain how interior pulp color dictates flavor profile, comparing simple, sugary "honey figs" to complex, berry-flavored varieties that feature deep purple pulp.
Managing winter protection and tree architecture is essential in colder climates, where dieback forces trees to restart from the ground and delays harvest by up to two months. To build resilient plants, I demonstrate how pinching the growing tips of young, single-stemmed trees forces lateral branching, builds a wider canopy, and strengthens the root system. Moving through my potted collection across two properties, I show how slicing into underripe fruit reveals whether an unknown variety is Common, Smyrna, or San Pedro based on internal cavity structure and its need for pollination. Between managing irrigation setups, hand-pollinating Smyrna figs with caprifig pollen, and maintaining intercropped garden beds using mushroom compost, I emphasize that trialing new varieties requires long-term patience with weather delays and mislabeled stock to find the true standout performers.
