For this episode, we visited Ito Okashi, a breakfast-only restaurant in Kyoto famous for its charcoal-grilled, extra-thick (over 3 cm / 1.2 in) coho salmon.

Every day, the salmon is carefully prepared inside a 160-year-old traditional Japanese townhouse. The entire building is kept as cool as an old-fashioned ice cellar, allowing thick-cut salmon fillets to be expertly grilled over charcoal one after another.

Despite serving breakfast only, the restaurant stays fully booked until lunchtime and has become one of Kyoto's most sought-after breakfast destinations.
