🍑 Golden Peach Upside-Down Cake 🍰
This recipe will give you a moist, tender cake with beautifully caramelized peaches and a light hint of honey and lemon that complements the fruit without overpowering it.🍑🌿
🧺 Ingredients 📌
Peach Layer:
50 g unsalted butter, melted
60 g brown sugar
1 tbsp honey
½ tsp vanilla extract
3 large ripe peaches, sliced or canned peaches
Pinch of cinnamon (optional)
Cake Batter:
210 g all-purpose flour
2 tsp baking powder
¼ tsp salt
120 g unsalted butter, softened/melted at room temperature
140 g sugar
2 large eggs, at room temperature
1 tsp vanilla extract
170 g Greek yogurt
2 tbsp milk
Zest of 1 small lemon
👩🍳 Instructions 📌
1. Preheat the oven to 175°C. Grease a 9-inch (23 cm) round cake pan.
2. Mix the melted butter, brown sugar, honey, and vanilla. Spread evenly over the bottom of the pan.
3. Arrange the peach slices in a decorative pattern.
4. Whisk together the flour, baking powder, and salt. Set aside.
5. Beat the softened/melted butter and sugar until pale and fluffy (3–4 minutes).
6. Beat in the eggs one at a time, then add the vanilla and lemon zest.
7. Fold in the flour mixture alternately with the Greek yogurt. Stir in the milk just until the batter is smooth.
8. Spoon the batter gently over the peaches and level the top.
9. Bake for 48–55 minutes, or until a skewer inserted into the center comes out clean.
10. Cool in the pan for 15 minutes, then carefully invert onto a serving plate.
🍪 Soft Oatmeal Cookies 🍪
Makes: 20 or more cookies
🧺 Ingredients 📌
150 g unsalted butter, softened
100 g sugar
1 large egg
1 tsp vanilla extract
180 g all-purpose flour
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
150 g rolled oats
½ tsp cinnamon (optional)
80 g raisins, dried cranberries, or chocolate chips (optional)
👩🍳 Instructions 📌
1. Preheat the oven to 180°C. Line a baking tray with parchment paper.
2. Cream the butter and both sugars until light and fluffy.
3. Beat in the egg and vanilla.
4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
5. Add the dry ingredients to the butter mixture and mix just until combined.
6. Stir in the rolled oats, cinnamon, and any optional add-ins.
7. Scoop/form about 1 tbsp of dough per cookie onto the tray, leaving space between them.
8. Bake for 10–12 minutes, until the edges are lightly golden and the centers are still soft.
9. Let the cookies cool on the tray before storing in the cookie jar.
Tips📌
For chewier cookies, chill the dough for 20–30 minutes before baking.
Add chopped walnuts or pecans for extra crunch.
Store in an airtight container for up to 5 days.
