Farm Shopping and My NEW Favorite Thing!

Hello, dear friends – I hope you are all doing well! In today’s episode we are buying fresh corn from a local farmer, plus making the ULTIMATE Mexican Street Corn Salad. My rough recipe for salad is written out below!

MEXICAN STREET CORN SALAD (as made by KLJ):
1 tablespoon butter, plus 1 tablespoon olive oil for sautéing
Blanched corn kernels – 3 generous cups
1 red bell pepper, diced
1 jalapeno, seeds and ribs removed and diced
The juice of 1 lime
Cilantro, roughly chopped – a half cup, plus more for garnish
Mayonnaise –enough to loosely bind the ingredients
Paprika – a half teaspoon
Cayenne pepper – a light dusting (about ¼ teaspoon)
Cotija cheese, crumbled –1 cup (or more or less to taste)

In a large skillet (cast-iron for me), warm the butter and oil. When the butter melts, add the corn, bell pepper, and jalapeno. Cook, while stirring from time to time, until the vegetables begin to color – about 7 minutes. Remove the skillet from the heat and allow to cool until only sightly warm – about 30 minutes.
Stir in the lime juice, mayonnaise, paprika, cayenne, and cotija cheese. Taste carefully for flavor – you may want to add additional lime juice.
Serve slightly warm or at room temperature with tortilla chips for scooping!
