🟢做法:
1️⃣ 冬菇提前一晚浸泡至軟身, 熱鍋下少油,放薑片,放入冬菇,加少許紹興酒、250 毫升雞湯、冰糖及少許蠔油,小火炆約 30 分鐘,備用。
2️⃣ 將解凍海參汆水1 至 2 分鐘撈出,去除海參肚內的東西, 洗淨備用。
3️⃣ 煮滾一鍋水,關火,後放入鮑魚浸約 10 秒,撈起放入冷水中,用小刀沿鮑魚殼刮下起出鮑魚,去除鮑魚嘴及內臟,用牙刷刷乾淨鮑魚表面黑色東西, 再用澱粉揉搓洗淨,打上十字花刀備用。
4️⃣ 熱鍋下油,爆香薑、蒜頭、紅蔥頭、蔥白,放入海參,灒入 1 湯匙紹興酒,加入炆過的冬菇、少許蠔油及少許雞粉炆 5 分鐘。放入鮑魚,再炆 5 分鐘,試味後可加入少許鹽,少許老抽上色,勾薄芡,撒上蔥綠翻炒均勻上碟。

🟢Ingredients:
Fresh abalones – 10 pcs
Frozen sea cucumber – 350 g
Soaked dried shiitake mushrooms – 10 pcs
Chicken broth – 250 ml
Ginger – 1 piece
Garlic – 2 cloves
Shallot – 1 pc
Spring onion – as needed
Rock sugar – 1 small piece
Shaoxing wine – as needed
Oyster sauce – as needed
Chicken powder – a small amount
Dark soy sauce – a small amount
Salt – a small amount
Cornstarch slurry – as needed

🟢Cooking Directions:
1️⃣ Soak the shiitake mushrooms overnight until softened. Heat a wok with a little oil, add ginger slices, then add the mushrooms. Add a little Shaoxing wine, 250 ml chicken broth, rock sugar, and a little oyster sauce. Braise over low heat for about 30 minutes. Set aside.
2️⃣ Blanch the thawed sea cucumber for 1 to 2 minutes, remove, discard the internal parts inside the sea cucumber, clean thoroughly, and set aside.
3️⃣ Bring a pot of water to a boil, turn off the heat, then add the abalones and soak for about 10 seconds. Remove and place in cold water. Use a small knife to scrape along the shell and remove the abalones. Discard the abalone mouth and internal organs. Scrub off the black residue on the surface with a toothbrush, then rub with cornstarch to clean. Make crosshatch cuts on the abalones and set aside.
4️⃣ Heat a wok with oil. Stir-fry ginger, garlic, shallot, and the white part of the spring onion until fragrant. Add the sea cucumber, splash in 1 tbsp Shaoxing wine, then add the braised shiitake mushrooms, a little oyster sauce, and a small amount of chicken powder. Braise for 5 minutes. Add the abalones and braise for another 5 minutes. Taste and add a little salt if needed, then add a little dark soy sauce for colour. Thicken slightly with cornstarch slurry, sprinkle in the green part of the spring onion, stir well, and serve.

🟢Bahan:
Abalon segar – 10 pcs
Teripang beku – 350 g
Jamur shiitake kering, direndam – 10 pcs
Kaldu ayam – 250 ml
Jahe – 1 potong
Bawang putih – 2 siung
Bawang merah – 1 buah
Daun bawang – secukupnya
Gula batu – 1 potong kecil
Arak Shaoxing – secukupnya
Saus tiram – secukupnya
Bubuk kaldu ayam – sedikit
Kecap asin gelap – sedikit
Garam – sedikit
Larutan tepung maizena – secukupnya

🟢Cara Memasak:
1️⃣ Rendam jamur shiitake semalaman hingga lunak. Panaskan wajan dengan sedikit minyak, masukkan irisan jahe, lalu tambahkan jamur. Masukkan sedikit arak Shaoxing, 250 ml kaldu ayam, gula batu, dan sedikit saus tiram. Masak dengan api kecil selama sekitar 30 menit. Sisihkan.
2️⃣ Rebus sebentar teripang beku yang telah dicairkan selama 1 hingga 2 menit, angkat, buang bagian dalamnya, bersihkan hingga bersih, lalu sisihkan.
3️⃣ Didihkan satu panci air, matikan api, lalu masukkan abalon dan rendam sekitar 10 detik. Angkat dan masukkan ke dalam air dingin. Gunakan pisau kecil untuk mengikis sepanjang cangkang dan keluarkan daging abalon. Buang mulut dan organ dalam abalon. Sikat bagian hitam di permukaan dengan sikat gigi, lalu gosok dengan tepung maizena hingga bersih. Buat sayatan silang pada abalon dan sisihkan.
4️⃣ Panaskan wajan dengan minyak. Tumis jahe, bawang putih, bawang merah, dan bagian putih daun bawang hingga harum. Masukkan teripang, percikkan 1 sdm arak Shaoxing, lalu masukkan jamur shiitake yang telah dibrais, sedikit saus tiram, dan sedikit bubuk kaldu ayam. Masak selama 5 menit. Masukkan abalon dan masak lagi selama 5 menit. Cicipi, tambahkan sedikit garam jika perlu, lalu tambahkan sedikit kecap asin gelap untuk warna. Kental-kan sedikit dengan larutan maizena, taburi bagian hijau daun bawang, aduk rata, dan sajikan.
