📌 Ingredients
Peanut Butter 100g (about 6 and ½ tablespoons) - smooth
Butter - 55g (¼ cup)
Sugar - 175g (¾ cup, 2 tablespoons)
3 Eggs
Natural yogurt or sour cream 110g (½ cup)
Plain flour 175g (1 cup, 2 tablespoons)
Baking powder 1 ¼ teaspoons
Vanilla extract 1 teaspoon
Peanut butter ganache:
Peanut butter smooth 60g (about ¼ cup)
White chocolate 150g
Heavy cream 80ml (⅓ cup)
Nutella 2-3 tablespoons (optional)
Measuring cup size - 240ml
Baking pan 20x20 cm (8x8 inch)
📌 Method
Cream the peanut butter, butter, vanilla extract, and sugar together for about 3 minutes, until light and creamy.
Add the eggs and whisk for about 2 minutes, or until well combined.
Scrape down the sides of the bowl as needed.
Add the yogurt and whisk for a further 1 minute until smooth and fully incorporated.
Sift the flour and baking powder directly into the bowl.
Gently fold the dry ingredients into the batter by hand.
Whisk on low speed for about 15 seconds, then give the batter a final gentle mix to ensure everything is evenly combined.
Pour the batter into a lined baking pan and spread evenly.
Bake in a preheated oven at 170°C (338°F) for 30–35 minutes, or until a skewer inserted into the centre comes out clean.
While the cake is still warm, poke holes all over the surface and pipe Nutella into the holes.
To make the ganache, pour the warm cream over the white chocolate and stir until smooth. Add the peanut butter and mix well until fully combined.
Pour the ganache evenly over the warm cake and allow it to rest for about 15 minutes before serving.
