Ingredients

For the crispy shallots and shallot oil
10 shallots, finely sliced
Vegetable oil, for frying

For the crispy anchovies
50g (1.8 oz) ikan bilis (dried anchovies), rinsed and drained
Reserved shallot oil (from above), for frying

For the fried rice
2–3 tbsp reserved shallot and anchovy oil
6 eggs
2 tbsp sambal chilli, or to taste
2½ rice cooker cups raw jasmine rice, cooked with an equal volume of water, then left in the fridge overnight (yields approx. 750g (26.5 oz) cooked rice). Alternatively, use freshly cooked rice made with 10–15% less water than usual.1½ tsp salt, or to taste
1 tsp chicken stock powder
100g (3.5 oz) leafy greens, such as kai-lan or choi sum
2 tbsp light soy sauce
1 tbsp kecap manis (Indonesian sweet soy sauce)
