
Simple and incredibly delicious potato and spinach muffins! A fabulous weekend meal!

Mash 500 g (1 lb) of hard-boiled potatoes in a large bowl. Add 2 eggs, season with salt and pepper, and mix thoroughly.
Heat some cooking oil in a pan and briefly sauté 300 g (10.5 oz) of spinach until wilted. Season the spinach with salt and pepper.
Finely chop the spring onions and dice 100 g (3.5 oz) of mozzarella cheese.
Add the mozzarella to the potatoes. Then add the sautéed spinach and the finely chopped spring onions. Mix everything well until evenly combined.
⚙️ ... Grease small baking dishes or a casserole dish with a little olive oil and sprinkle with breadcrumbs. Spread the potato and spinach mixture in the dish.
Sprinkle the top with a little more breadcrumbs and drizzle with a little oil.
Bake the casserole for 50 minutes at 180°C / 350°F, until the top is golden brown and crispy.
Let it cool briefly and serve warm. The melted mozzarella cubes make the casserole especially moist and flavorful.
