Step into another quiet week of slow living in England. 🌿
This week, I spend a few gentle summer days at home, making the most of the garden while trying to stay cool during one of the hottest weeks of the year.
In the kitchen, I prepare a creamy orange, honey and mascarpone ice cream, a refreshing watermelon lemonade, and two simple seasonal salads filled with fresh summer ingredients. Along the way, I share a few recent charity shop finds, browse through some inspiring books, and enjoy a peaceful evening walk with my husband and Alma.

🍊 Orange, Honey & Mascarpone Ice Cream
Ingredients
500 ml whole milk
250 ml double cream
Zest of 2 oranges
Juice of 2 oranges
4 egg yolks
125 ml (½ cup) floral honey
250 g mascarpone
4 egg whites
1 tsp vanilla extract
Pinch of sea salt
Extra honey, to drizzle (optional)

🍉 Watermelon & Strawberry Lemonade
Ingredients
3 cups watermelon, cubed
1 cup ripe strawberries
Juice of 1 lime
1 tbsp honey
Pinch of sea salt
4 fresh mint leaves
2–3 cups cold water
Ice
Lime or lemon slices, to serve

🥗 Watermelon & Feta Salad
Ingredients
150 g watermelon, cubed
1 avocado
Handful of curly and flat-leaf parsley, chopped
Red onion, finely chopped (to taste)
Handful of diced cucumber
125 g feta, crumbled
Dressing
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
2 tbsp maple syrup
1 tsp honey
Juice of ½ lime or lemon

🥗 Chickpea & Tuna Summer Salad
Ingredients
Chopped lettuce
1 tin chickpeas, rinsed and drained
1 large tomato, chopped (I used an Isle of Wight Pink tomato)
A little red cabbage, finely shredded
4 eggs
1 tin tuna
Roasted peppers, peeled and chopped
125 g feta, crumbled
2 fresh mint leaves
Maldon sea salt
Pumpkin seeds
Dressing
2 tbsp extra virgin olive oil
1 tbsp wholegrain mustard (or Dijon mustard)
Juice of ½ lime or lemon
1 tbsp apple cider vinegar
2 tbsp maple syrup
Handful of chopped parsley
2 tbsp finely chopped red onion
