Join me for a simple summer day of homemaking in the English countryside, where the slower pace of the season invites us to enjoy the beauty of an ordinary and unhurried life.

In today's video I'm making homemade strawberry lemonade to help us keep cool during the recent heatwave. I also harvest kale from the vegetable garden for one of our favourite Greek Cypriot summer meals, Louvi (my children are half Cypriot, so we eat a lot of Greek food in our home!), spend time tending the garden and cutting fresh flowers for the house, and bake sourdough as we settle into the gentle rhythm of July.

As always, I hope this film offers a moment of calm and encouragement to slow down and find joy in the everyday moments that so often become the ones we remember most.

Louvi Recipe:
2-3 heads of spring greens (I added kale too as I have so much in the garden but we always use spring greens as the main green as this is what's traditionally used)
3-4 large courgettes
2-3 tins black eyed beans
3-4 lemons
Extra virgin olive oil - plenty!
Sea salt
Tuna (if plant based, just miss this out)
Parsley
Spring onion

Chop the spring greens and courgettes and boil for 30 mins before adding the tinned beans. Boil for another 10-15 mins.

Serve warm with lots of olive oil, salt, lemon, tuna, parsley & spring onion. We love it served with pitta bread and hummus too. Note..this dish does require lots of olive oil, lemon and a good amount of sea salt to enhance the flavour!

Homemade Butter Recipe:
Put 300ml of double cream in a stand mixer and mix on medium/high speed until the butter separates from the butter milk. Wash the butter in ice cold water, changing the water at least once until the water is clear. Add a sprinkle of salt, if preferred, and store in an airtight container in the fridge for a week or two. Store the buttermilk in the fridge and use for a baking recipe.
