Crispy pan-seared salmon with tender asparagus and a silky lemon butter sauce made entirely in one pan.
The rich buttery sauce is balanced with fresh lemon, white wine, capers, and a touch of mustard for extra depth and brightness. Juicy salmon, vibrant asparagus, and glossy sauce come together in a simple dinner that tastes elegant, fresh, and surprisingly restaurant-quality.

Ingredients:
Salmon fillet
Green asparagus
1 lemon
½ tsp sweet mustard
2–3 tsp capers
¼ cup/ 60 ml dry white wine
3 tbsp/45 g butter
Olive oil
Salt
Black pepper
Recipe:
Snap off the woody ends of the asparagus.
Trim the small scales along the stalks.
Cut the salmon fillet into portions.
Season both sides with salt and black pepper.
Pat the surface dry with paper towels.
Make sure the pan is properly preheated.
Add olive oil.
Add the asparagus.
Turn occasionally while cooking.
Season lightly with salt and black pepper.
Cook until bright green, then move to the side.
Add the salmon.
Cook for 2 minutes, then flip.
Remove the asparagus once tender.
Cook the salmon for another 2 minutes, also searing the sides.
Remove the salmon once cooked.
Pour the white wine into the same pan.
Reduce until the alcohol smell disappears.
Add the capers and a little brine from the jar.
Add a little sweet mustard.
Mix everything together.
Add cold cubes of butter.
Swirl the pan until the sauce thickens and becomes glossy.
Grate in a little lemon zest.
Add a few spoonfuls of lemon juice.
Season very lightly with salt and pepper.
Mix well.
Ready to serve.
