This salmon in a amazing sauce, you would fall in love with. On Sundays, I usually try to cook something special for my family and one of their special meal.
Prep: 10 mins. Cook: 15 mins Total : 25 mins. Serve: 5
5 fresh salmon filets (12 oz )
1 c cherry tomatoes
1 c chicken broth
1 c heavy cream
Salt to taste
1/4 tsp pepper
1 tbs lime
3 - 4 garlic cloves (minced)
1/2 red onion (chopped)
8 oz spinach
4 oz cheddar cheese ( shredded )
Directions:
1. Season salmon with salt and pepper on both sides
2. On medium heat fry fish, then prepare the sauce
SAUCE
3. To prepare the sauce melt butter on medium heat, add chicken broth, chopped onion, garlic and bring to simmer.
4. Add the cream, the spinach. Allow spinach to wilt.
5. Place the cooked fish in mixture and top with cherry tomatoes. Let it simmer for another 2 minutes.
