RECIPE & INGREDIENTS
Ingredients:
• 7 oz (200 g) canned chickpeas, rinsed and drained
• 2 cucumbers
• 15 cherry tomatoes — 5.3 oz (150 g)
• 1 bell pepper
• 10–12 olives
• 1/2 red onion
• A bunch of parsley
• Juice of 1/2 lemon
• 1 garlic clove
• 1 tbsp honey or sugar-free syrup
• Salt to taste
• Black pepper to taste
• 1 tsp (5 ml) balsamic vinegar
• 2 tbsp (30 ml) olive oil
• 2.5 oz (70 g) feta cheese
Instructions:
1 Rinse and drain the canned chickpeas. Let them dry slightly.
2 Chop the cucumbers, cherry tomatoes, bell pepper, olives, red onion, and parsley.
3 Add the chickpeas to the vegetables.
4 In a small bowl, mix lemon juice, garlic, honey or sugar-free syrup, salt, black pepper, balsamic vinegar, and olive oil.
5 Pour the dressing over the salad and mix well.
6 Cover the salad and refrigerate for 15 minutes.
7 Before serving, add the feta cheese.
8 Serve with toasted bread if desired.
