There is a man who makes essential bread at the foot of beautiful mountains in Tanba, Hyogo Prefecture. Daisuke Nakayama.
He grinds organically grown wheat from Hokkaido on a millstone in his workshop, kneads the dough by hand without using an electric mixer, and bakes it in a wood-fired oven after natural fermentation.
His awareness of environmental issues led him to the baking industry, and his admiration for the long-established bakery “Poilane” in Paris, France, led him to his current style of baking.
In this video, I closely follow Nakayama's early morning baking and follow the production process to find out why he was able to capture his dream and the origin of his thinking.
