In 1875, the Army shipped a ration crate to Fort Concho, Texas. Inside, 12 pounds of salt pork, 18 pounds of hardtack, dried beans, green coffee nobody had roasted yet. That crate was a week's ration for one Buffalo Soldier on patrol. The soldier was Sergeant George Jordan, 9th Cavalry, born into bondage in Williamson County, Tennessee. Every dish on this list passed through Jordan's mess kit in 23 years of service. Number 7 was cooked on a plains fire the night the wind would not quit.
