On a Sunday in Masatepe, Nicaragua, my guide Carlos and I set out to try the local favorite, sopa de gallina, at El Lomo y La Costilla. This rich rooster soup, loaded with vegetables and hearty corn dumplings, was tender, flavorful, and unforgettable—especially with smoky rib meat and spicy chilies on the side. Afterward, we explored Masaya’s historic artisanal market, picking up handmade crafts, hammocks, and masks, before heading to the top of Masaya Volcano for breathtaking views, fresh coconuts, and a truly one-of-a-kind Nicaraguan adventure.
