
Easy One Pan Lemon Chicken Orzo Recipe
Welcome back to the kitchen! Today Jamie and I are whipping up a bright, fresh, and incredibly easy one-pan dinner: Lemon Chicken Orzo with Spinach. If you think you aren't good at cooking, this is the recipe for you! It’s simple, fast (under 30 minutes!), and only uses one main skillet, which means less cleanup and more time for husky cuddles.
We just got back from Virginia and realized we needed a quick, comforting meal. This dish hits all the right notes—zesty lemon, creamy parmesan, and a little kick from red pepper flakes. Plus, the "Kitchen Helpers" were on high alert for their favorite part: the taxes!
Ingredients
1 pound chicken breast (cubed)
3 tablespoons olive oil (divided)
5 oz baby spinach
1.5 cups uncooked orzo (regular or wheat)
3 cups chicken broth (reduced sodium optional)
1 medium shallot (finely diced)
3 to 6 cloves garlic (minced)
1/4 teaspoon crushed red pepper flakes
2 teaspoons Italian seasoning
Salt (to taste)
1/2 cup heavy cream
1/2 cup freshly grated parmesan cheese
2 tablespoons lemon juice
2 teaspoons lemon zest
Tips and Tricks
❄️ Pro-tip: If you take your chicken out of the freezer and let it thaw just a little bit, it is 10 times easier to cube than if it's fully thawed!
🥘 If you have a glass top stove and aren't sure about cast iron, an enamel-coated skillet or a large non-stick pan like my Ninja skillet works perfectly for this one-pan wonder.
🌾 Toast your orzo! Sautéing the dry orzo in the oil/shallot mixture for 1-2 minutes before adding liquid prevents the noodles from getting gummy and adds a lovely nutty flavor.
🥛 Temperature control: Always add your chicken broth to the hot pan before the heavy cream to prevent the cream from curdling.
🥗 Make it vegetarian! Simply swap the chicken broth for vegetable stock and leave out the chicken or replace it with extra veggies.
🔥 Adjust the heat: If you find black pepper spicy, definitely leave out the crushed red pepper flakes!

🥬 The "Spinach Tax" was a huge hit—Memphis actually chews her rabbit food, while Eleanor is a little more indecisive but eventually joins the healthy snack club.
🧀 No recipe is complete without the "Cheese Tax." The girls all got a taste of that freshly grated parmesan at the end.
🏒 Keeping the peace: While I was at the stove, one helper was busy watching hockey while Kira made sure to stay in her safe spot away from the sizzle.
