Pumpkin-Shaped Cookies (25–30 pcs.)
Ingredients:
Pumpkin purée (roasted Hokkaido) — 200 g
Butter (room temp) — 120 g
Brown sugar — 100 g
White sugar — 50 g
Egg yolk — 1
All-purpose flour — 280 g
Baking powder — 1 tsp
Salt — pinch
Cinnamon — 1 tsp
Ground ginger — ½ tsp
Nutmeg — pinch
Vanilla — optional
Method:
Roast pumpkin, blend into purée, drain excess liquid.
Cream butter with both sugars, add yolk.
Mix in purée.
Combine dry ingredients separately, then fold into mixture.
Chill dough 30 min.
Roll to 5 mm, cut with pumpkin-shaped cutters.
Bake at 175 °C for 12–14 min until edges are golden.
Decorate with icing or dust with powdered sugar.
