Hello from the cozy cabin in the woods 🌲
in this video, I’m baking a pumpkin walnut cake, taking a scenic hike in the mountains and admiring the beautiful autumn colors. back at the cabin, I spend some quiet moments enjoying a warm cup of tea and turning autumn leaves into watercolor drawings. later I am watching the squirrels and birds and end the evening with an autumn-inspired woodland painting, accompanied by the soothing sound of rain.

🎃 easy vegan pumpkin walnut cake (150 g flour)

ingredients
150 g all-purpose flour
200 g fresh pumpkin, peeled and grated
100 g chopped walnuts
100 g brown sugar or date sugar
60 ml vegetable oil
60–80 ml plant-based milk (oat or soy)
1½ tsp baking powder
1 tsp ground cinnamon
½ tsp vanilla extract
a pinch of salt
½ tsp ground ginger (optional)

in a bowl, mix the grated pumpkin, brown sugar, oil, vanilla, and 60 ml plant milk.
add the flour, baking powder, cinnamon, salt, and optional ginger. stir gently, then fold in the walnuts. if the batter seems too dry, add the remaining milk a little at a time. it should be thick but easy to stir.
preheat the oven to 180°c conventional or 160°c fan. pour the batter into a greased or lined small loaf tin (around 20 ×10 cm) or 18 cm round cake tin.
bake for 35–45 minutes, checking with a toothpick in the centre. if it comes out with wet batter, bake a little longer.

🎨 painting watercolor leaves:
-start with a light colored wash to paint the basic shape of your leaf
-while the paper is still damp add yellow, red and brown, then let the colors blend naturally
-add deeper shades to create contrast like green, keeping some lighter yellow areas visible
-use a fine brush to paint the delicate veins
