It’s naturally low carb, gluten-free, and blood sugar friendly, and it comes together in minutes using frozen cauliflower rice.
This is one of my favorite ways to replace regular rice while still getting amazing flavor and texture.

Cauliflower Rice
Ingredients:
1 package (12 oz.) frozen Cauliflower Rice
1 red bell pepper, finely chopped
½ yellow onion, finely chopped
1 ½ cups of mushrooms, any type, finely chopped
Salt
1 tsp. Garlic powder
1 tsp. Dried basil
1 Tbsp. extra virgin olive oil
½ cup sliced almonds, dry toasted, optional
Directions:
Preheat a cast iron pan over medium high heat. Add the oil and when hot add the onion, bell pepper and mushrooms and saute for 5 - 7 minutes. Season with salt, garlic powder, and basil.
Add the cauliflower rice, stir to combine and add a touch more of the seasonings. Saute for another 5 minutes or until the cauliflower is heated through.
Serve it up with the sliced almonds sprinkled on top and fresh parsley (optional). This is perfect served with chicken, fish, turkey, pork etc.
