How have you been?

Spring is near in France and I have begun to plant the first seeds in the garden. I plated two types of radishes and peas. Soon I will also plant some indoor seedlings.
The camellia in the garden is in full bloom and so gorgeous. I’m so happy to see this explosion of color after all the grey days that we had those past few weeks.
I bake a classic French yogurt cake, it’s a very simple and delicious recipe.

🌸🍋 French Yogurt Cake 🍋🌸

3 Eggs
1 Yogurt pot
2 Pots of Sugar
3 Pots of all-purpose flour
10g Baking Powder
A pinch of salt
Half a pot of sunflower oil

Optional:
The zest and juice of one lemon.

Preheat the oven to 180°C
Break the eggs in a big bowl, whisk a little and add the yogurt.
Rinse the yogurt pot and dry it; it will be easier to measure your ingredients.
(If you choose to make a citrus cake, add the zest and juice right now; if not skip this part)
Add the two pots of sugar and mix until frothy.
Add the pinch of salt and the three pots of flour and mix again until fully incorporated.
Add the baking powder and mix again.
To finish the batter, add the oil, mix gently at first and then more vigorously until the batter is smooth.
In a buttered and floured pan, pour the batter and bake in the oven for about 35 minutes. (Until a knife comes out clean of the center of the cake).
Add any frosting or toppings you like
