In the case of a whipped cream cake using fruit, the sourness is very important along with the sweetness of the fruit.

If you make a whipped cream cake with only sweet fruit, I think it lacks the charm of a fruit cake.

In order to add the taste of blueberries, which can be bland, I boiled a compote with a stronger sweetness and sourness to add a layer.

I put a lot of cream cheese in the cream, which goes very well with blueberries.

* Blueberry Compote
Blueberries 87g
Sugar 36g
Lemon juice 8g

* Genoise
Size 1 (diameter 15)

Egg 130g
Sugar 85g
All purpose flour 75g
Butter 15g
Milk 25g

165 degrees 24 minutes

* Cream cheese whipped cream
Cream cheese 70g
Sugar 60g
Whipped cream 340g

Syrup 45g + Liqueur 3g (optional)

* Genoise (Ø 18cm)

Egg 130g

Vanilla extract
Cake flour 75g
Unsalted butter 15g
Milk 25g

Syrup 45g +liqueur 3g (Optional)

* Cream cheese whipped Cream

Cream cheese 70g
Sugar 60g
Fresh cream 340g

- Order
Blueberry compote

1. Put blueberries, sugar, and lemon juice in a deep container and grind them with a bar mixer.
2. Put them in a pot and simmer over high heat until they become 70g. Let cool and use.

Genoise
1. After breaking the egg, add vanilla extract and sugar, then place it on hot water and stir slowly to raise the temperature to body temperature. 2. Melt butter and milk in a double boiler (you can also use a microwave)
3. Whip 1 at high speed
4. When the ribbon shape is drawn, set the whipper at a right angle and move it slowly at low speed to remove rough air bubbles and create a smooth and glossy dough.
5. Add the sifted flour and mix well so that there are no lumps.
6. Add equal amounts of dough to the melted butter and milk (usage temperature 50-60 degrees) and mix, then add it to the main dough and mix well.
7. Drop it from a height of about 30cm on the cake pan and pan it. (This is the process of removing large air bubbles that entered during the process of stirring with a spatula.)
8. Bake in the oven at 165 degrees for 24 minutes.
9. Shock it immediately after taking it out of the oven and remove it from the pan
10. After cooling, remove the bottom surface and slice it into 3 pieces of 1.5cm.

Cream Cheese Whipped Cream
1. After loosening the cream cheese, add sugar and mix.
2. Add whipped cream little by little and mix carefully so that there are no lumps.
3. Whip at medium-high speed.
