These super easy Singapore-Style Chilli Prawns capture everything that makes chilli crab so iconic: the sweet, spicy and tangy sauce, the garlicky aroma, and the glossy, finger-licking finish that makes you reach for seconds. Ingredients

For the Chilli Prawns
½ medium red onion, finely chopped
3 cloves garlic, finely chopped
3g (0.1 oz) dried shrimp, rehydrated and finely chopped
½ tbsp sambal chilli paste
2 tbsp tomato ketchup
300ml (10.6 fl oz) water
½ tsp sugar
500g (17.6 oz) prawns, deveined
A little cornflour slurry (cornflour dissolved in a splash of water)
1 egg, lightly beaten

To Serve
Deep-fried mantou (Chinese plain buns) (optional)
