Pork Chips with Cherry Peppers

Let's make one of my most favorite and most made recipes which are my pork chops with cherry
peppers. It is a recipe I grew up with. I have been eating pork chops with cherry peppers literally
my whole life and it's still one of my very favorite things and something that I make on a
weekly basis because it's just easy. I can always find them on sale and it doesn't take that long
to come together. You season both sides of the pork chops. Make sure you get some nice bone-in
pork chops with a little salt pepper and a dusting of flour. I let them sit aside for a few minutes
and then I sear them in a nice large hot skillet with some olive oil until they're a beautiful
golden brown. Then I flip them. That only takes about three to four minutes. I flip them and then
I just cook them for one more minute. I don't want to cook them all the way through or they'll be
tough and then I add in some onions. Sometimes I add in garlic instead of onions but an allium is
fine. You could do shallots here or like I said you could just do garlic. Let that sizzle for a
but you can also just find them pre-sliced and just use those. You can also find the sweet ones
preferably. For me anyway they have to be the hot ones and I just tear them apart like so and you
can use as many or as few as you like but like I said if you don't like heat you can use a sweet
version. Once your onions have cooked down a bit I'm going to deglaze with about a half a cup of
white wine. Let that go for a minute and then I add about a cup of chicken stock and then at this
point you're going to come in and add in your cherry peppers. Like I said hot or sweet totally
up to you. They're just so delicious. There's something about the vinegarness of it it literally
makes my mouth water just thinking about it. I let this simmer for about I would say seven to eight
minutes. You don't want to overcook them or your pork chops will be dry until the sauce is nice and
reduced. Then I finish it with a little bit of parsley and that is it. So easy, so delicious,
so fantastic. A family favorite and something that I'm telling you you will make time and time again.
