3 Viral Japanese Yogurt Cheesecakes You Need to Try

You've probably seen this Japanese yogurt cheesecake everywhere.
So I made three versions.
Same base, different moods.
All soft, all simple, all a little extra.
This first one is strawberry, matcha and biscoff.
Sweet, calm and a little playful.
Strawberries add a little sweetness, nothing too much.
The base stays the same, just greek yogurt.
But you can change it easily.
Mascarpone, ricotta or cottage cheese work too.
Just blend them first.
If you're lactose free or vegan, I recommend coconut or soy yogurt.
Now the biscuits go into warm milk for a moment.
Then into the greek yogurt, as many as will fit.
They soften quickly and after a short rest in the fridge,
they release a sweet and caramel flavour.
A light dusting of matcha on top, just to balance the colours and the sweetness.
This kind of dessert you can make very fast.
The strawberries add fresh, bright note.
Creamy, light, gently green.
And it never lasts long.
This one is for the chocolate lovers.
And I have to admit, this is my favourite.
The base stays simple.
You can use vanilla or stracciatella yogurt if you want it sweeter.
I stick with greek yogurt.
The oreos go into warm milk, just like the biscoff.
They soften quickly.
If you don't feel like soaking them, you can add them straight to the yogurt
and let the cake rest in the fridge for about 6 hours.
And yes, we add as many as we can.
If you don't wait long enough, that's fine too.
A little crunch can be a good thing.
With this version, you really can't go wrong.
Everyone loves it.
The last one is tiramisu inspired.
But this time with ladyfingers.
The ladyfingers go into the coffee with a little rum essence.
Not too much, just enough to bring warmth and depth.
You can add a spoon of honey to yogurt for sweetness.
And use mascarpone for a more classic tiramisu feel.
Everything comes together slowly, layer by layer.
Cocoa powder on top, right at the end.
You can smell it before you taste it.
This one needs a bit more time, but it's worth it.
Perfect even for a cozy cocktail night.
And that's it.
Three versions, one simple base.
Let me know what combinations you can imagine.
Even the weird ones might turn out really good.
I might make one of them in the next video.
Enjoy!
