Now let's get into this recipe.
First, start by gathering the ingredients.
The first thing you're going to do is add two bananas to a large bowl and thoroughly mash them.
For a super quick and easy way to mash the bananas, we recommend using a potato masher.
From there, add two eggs along with 1 1⁄2 cup of zero-fat Greek yogurt.
After that, thoroughly whisk these ingredients to make sure they're all combined.
The key is to whisk these ingredients first before adding the rest of the wet ingredients
so they're all combined and to avoid overmixing.
Once you've done that, add 3⁄4 cup of sugar or a sugar-free sweetener,
1⁄4 cup of unsweetened almond milk or your milk of choice,
and 1 teaspoon of vanilla extract.
Then thoroughly whisk the wet ingredients.
After that, in a separate large bowl, mix 2 cups of Kodiak Cakes Buttermilk Power Cakes Mix
and 1⁄4 teaspoon of baking soda.
Mix the dry ingredients, then add the wet ingredients to the dry a little at a time
until everything is fully combined, making sure not to overmix.
Next, lightly fold in 1⁄2 cup of mini chocolate chips
or use your favorite sugar-free chocolate chips.
From there, lightly spray a nonstick muffin pan with oil or add parchment paper liners,
then pour the batter into the muffin pan.
This recipe makes about 16 muffins.
As an option, you can top with chocolate chips on top before baking,
then bake the muffins at 350 degrees Fahrenheit for 18 to 22 minutes
or until a toothpick inserted into the center comes out clean.
Then let the muffins slightly cool and enjoy.
