Recipe for Plain sourdough with Spiral mixer :
5 Loaves:
1750G Bread Flour
1250G Ice Water
350G Starter
35G Salt
Mix Starter Flour and water with mixer for 5 min , rest 25min , add salt, another 15min to 20 min mixing , or until it pass the window pane test .dough temp should not exceed 27c , rest 30min , coild fold , 40 min rest , coild fold finish bulkk fermentation at 26c for 2hours and 20 min less or more we are aiming for 40 to 50% rise as temp is high .
shape cold proof overnight .
Recipe for Chocolate bread with planetary mixer :
1750G flour
1250G water
350G starter
50G cocoa powder
50G sugar
35G salt
mix with mixer not more than 5 min we are not looking for full development , 30min rest , on the counter few slap and fold round the dough into the bowl , 30 min rest , on the counter lamination add the inclusion , 45 min rest coil fold , 45min rest last coil fold .
bulk fermentation up to 2 hours at 26c .
cold proof overnight at 2 to 4c .
