Look at the inside. You can see banana pieces, chocolate, nuts and the crumb is light, not wet.
This is not an accident. Let's bake this banana bread together. Let me show you all the secrets
to achieve this nice crumb. These are really ripe bananas and they're ready to use. Ingredients are
simple. What matters is how to use them. Beat the butter and sugar until very pale and fluffy.
This is where the air comes from. Smash the bananas with a fork but do not make the puree.
Leave the chunks. They melt into bread later. Add eggs one by one and continue mixing until
they fully incorporate. Add the bananas and mix briefly. I use sourdough discard here.
It adds moisture and flavor. If you don't have sourdough, use sour cream instead. Same amount.
I still add some sour cream for extra richness. Add salt and cinnamon. Mix gently.
Then add flour and baking powder. Add baking soda and mix gently.
Some flour can stay visible. Do not over mix.
Add roasted nuts and dark chocolate and mix for just a few seconds.
Pour the batter into a pan, level it gently and add raw walnuts on top or more bananas,
chocolate, whatever you feel like. At this point your oven should be already preheated,
175 C or 340 F. It looks ready but it's not. The bread is high but this does not mean it's
baked inside. I check with a long toothpick. If it comes out wet, the center is still raw.
Banana bread finishes baking from the inside. Now the toothpick comes out clean. It's ready.
If you take it out too early, the middle will sink and stay heavy. This is a difference between
the bread that looks good and the bread that is good. Good baking is not about rushing,
it's about waiting at the right moment. Small steps taken seriously, that's what makes the difference.
