Today we're using up overly ripe bananas and making this delicious
soft and fluffy almond butter banana bread. If you guys have two bananas that look like this,
I'm going to show you how to turn it into almond butter banana bread that looks like this.
Welcome back to Mimi's Organic Eats. So grab your ingredients and less
reduced food waste and make something delicious.
So first we're going to preheat our oven to 350 degrees.
So this recipe is super easy. You guys don't even need a mixer.
You can mix this up with just a bowl and a spatula if you want.
But I'm going to use my hand mixer because I think it's a little bit faster.
So first you want to make sure that your butter is super soft.
Then we're going to add our light brown sugar.
Now we're going to mix on low until combined and there's no butter chunks.
Next we're going to add our bananas in in chunks.
Then we're going to add in our almond butter. And you guys can use any kind of
nut butter you want for this. It doesn't have to be almond butter.
Now we're going to mix on low to combine the bananas and the sugar.
Next we're going to add in our eggs. Then our heavy whipping cream.
Now we're going to mix on low to combine the eggs and the heavy whipping cream.
And then last we're going to add our dry ingredients.
Our all-purpose flour, our baking powder, our salt, and our cinnamon.
Now we're going to mix on low until combined into a banana bread batter.
Now we're going to transfer the batter to a one pound loaf pan.
I'm using my caraway loaf pan which always releases incredibly well so I never line it
with parchment paper. But you may want to line yours depending on what kind of pan you're using.
Then to get that perfect banana bread split down the center,
all you have to do is run a butter knife down the center right before baking.
Yup, it's that simple.
So now it's time to bake this at 350 degrees for about an hour.
So once our banana bread comes out of the oven, then you guys want to let it cool
completely before slicing. And you guys, this caraway loaf pan, it releases so well.
Watch how good this comes out.
So once I remove it from the pan, then I like to cut it into eight slices.
