Welcome to our video introducing "Teuchi Soba Rintaro", a cozy handmade soba restaurant in Tokyo, Japan.

This charming spot is run entirely by a female chef originally from Miyazaki Prefecture. She became known as the "Soba-Making Okami (proprietress)" during her time at a well-known restaurant in Ginza called Teruan.

After discovering authentic soba in the Kanto region, she was so inspired that she decided to train professionally. Eventually, she opened her own restaurant and now does everything herself—from making soba noodles by hand every morning to preparing nearly all of the dishes from scratch.

In this video, we show one round of her soba-making process, but on this particular day, she actually repeated the same process three times—and on busier days, she does it up to four times! She even mills her own soba flour and lets her homemade dashi (soup stock) rest for several days to bring out the best flavor.
(*Note: Dashi preparation is not shown in this video because it requires a multi-day resting process.)

Her passion for soba is clear in every step, and it’s rare to see a woman handle every aspect of a soba restaurant at such a high level.

Fun fact: the name “Rintaro” comes from the dog she used to have—her beloved companion and now the namesake of her shop.
