Good morning, everyone. By the time you see this video, it will be the new year.
So let me wish you all a very happy 2026. I hope the year brings you everything you want.
Now, my spouse has invited a couple of our new acquaintances over to the house for drinks this
evening. So we are going to make cocktail meatballs with sweet and sour dipping sauce,
crostini with goat cheese and candied bacon. And I might also do my signature cucumber cups.
And of course, we will do a small charcuterie board for the event.
And the first thing we're going to do is make the cocktail meatballs.
Now, for these cocktail meatballs, I need one egg. Give that a whisk. Breadcrumbs.
And I will post the recipe I'm using in the description below, so you don't have to write
anything down. Onion powder. Minced garlic. I'm using one of the thawed garlic pucks
from my homegrown garlic. Worcester sauce. Salt. Black pepper. And ground beef.
Or you could use ground chicken or ground turkey. So I have one clean hand here.
So now I need to create the meatballs. Do I want tiny meatballs or medium-sized meatballs?
I think medium-sized. These cocktail meatballs with sweet and sour dipping sauce were a huge
hit at my drinks and nibbles party. I hope you will give the recipe a try someday.
So this made 23 balls of joy. I'm going to pop them into a preheated 425 degree Fahrenheit
until they are brown and cooked. It's going to take 20 to 25 minutes.
I'm going to wash my hands, clean up my workstation,
and then we can get cracking on the sweet and sour dipping sauce. I need a bit of water.
And again, the recipe will be in the description below. Cornstarch.
Apple cider vinegar. Brown sugar. Tomato ketchup.
And soy sauce.
Whisk. I'm going to heat this mixture on the stove top while whisking occasionally
until the sauce thickens. And our sauce is done. It smells fantastic.
And our meatballs are done. The meatballs smell fantastic as well.
Now I need my tongs. Now I don't imagine we will be eating 23 of these meatballs tonight because,
well, again, it's only four of us. So I'm going to put 12 of these meatballs
in a bowl. I will reserve the rest for maybe a snack. And then I want to toss
these balls while they are hot with just a little of this sweet and sour sauce.
I'm going to pour some of the sauce into a bowl.
And then I want to try one of these meatballs for you.
Take a very small one, which hopefully has cooled enough that it doesn't burn my mouth.
Spoon some sauce on. Although we will be dipping these this evening.
Perfectly delicious. And I love the balance of sweet and sour with this sauce.
Now I'm going to let the meatballs finish cooling. I'm going to let my sauce cool.
And then I will cover everything and refrigerate. And tonight, before I serve, I will reheat,
probably in the microwave. And then I will put the meatballs on a platter and serve the sauce
alongside them. And after I've done that, we can move on to the next recipe.
On to the costini with goat cheese and candied bacon, which I have made before.
There's no printable recipe for this because it's not really a recipe. It's just a method.
So I have some goat cheese here, very tightly wrapped and wrapped again.
And I need to put this in a bowl. Would you believe it's wrapped yet again?
Put that in a bowl, let it come to room temperature. So when I mash it, it will mash
smoothly. Then I need my baguette. Oh, and I need to lower my oven temperature to 375 degrees
Fahrenheit. Because we're going to lightly toast the slices from the baguette, thus turning them
into costini. And how much of this baguette do I need? I'm going to cut these on the bias.
We can put the baguette slices on a baking tray.
Now normally I brush these baguettes with little olive oil or avocado oil. Today I'm simply
going to spray them with pure avocado spray. And of course the avocado oil will help the
baguettes to brown quickly in the oven. And I just need them to brown lightly.
Well this goat cheese is still very firm. I'm going to soften it up very quickly at
30% power in the microwave. All right, goat cheese has softened beautifully.
Simply going to stir it up until it turns very creamy, thick and creamy.
And there we have it. And if you're wondering why I'm making all of these appetizers early in the
day when my guests aren't coming until this evening, it's simply because I like to be a
guest at my own party. I want all of the food already prepared. And I have some bacon here.
This is thick cut bacon but you could use just regular cut bacon. And I'm not going to use
all of the bacon today but I am going to cook all of it off today. I need to wash my hands.
And as soon as our baguettes have finished toasting, I will put this rack on the baguette
baking tray. Baguettes have lightly toasted. They are certainly crisp,
which is exactly what I wanted. Transfer them to a cooling rack here.
Then we can put the bacon rack on this bacon tray and top some of them with brown sugar
and with pepper. So the six slices that are not candied will be used for food prep.
And into the oven they go, 375 degrees Fahrenheit for 25 minutes.
And while we wait on the bacon, I'm going to go ahead and chop up some chives that we can use
as a garnish for the sweet and sour meatballs.
We can put the chives in a little food prep bowl along with a paper towel. The paper towel
will absorb moisture so that the chives stay very fresh. I also want to prepare some
tender sprigs of thyme that we can use to garnish the crostini.
Thyme doesn't require a paper towel to stay fresh. It will be just fine in this bowl.
And it's bacon time. This bacon smells just incredible. So these are the three
that I candied and of course the brown sugar has caramelized on the bacon.
I need to let these cool for about five minutes.
My bacon has cooled. So now I'm going to cut up these three strips of candied bacon.
And I will show you how I plate everything we make today a little later in this video.
So I want to spread a toasted baguette slice generously with the goat cheese.
Then I add a piece of the candied bacon.
You put this on a plate. I'm going to give this a little drizzle of honey.
It's more than a little drizzle. And garnish with a sprig of thyme.
I want to taste test one of these for you.
I probably have goat cheese all over my lips but I don't care. This is delicious.
I'm going to put all of this bacon goodness and my baguettes
and my goat cheese away. Then clean up a little and we can go shopping for flowers
because I want to have flowers and a little touch of spring in the parlor when my guests arrive.
As you saw on the drive to the flower store we have snow and rain and sleet today.
We've got everything except sunshine. But I think these flowers will bring a bit of sunshine to the
parlor. And this is the Fuji green giant that you just saw me clip from the garden. Well I think
this arrangement will introduce a bit of cheerfulness and sunshine for the parlor.
We can enjoy it right here for now. I'm going to clean up and then I want to make those
cucumber cups. And on to the cucumber cups which I'm going to fill with egg salad.
So my English cucumber here. I'm going to cut it into roughly one inch rounds.
This is one of my signature appetizers.
I need my melon baller. Where are you melon baller? Right here. So I'm turning these upside down
on a layer of paper towels so they can drain. I never explained this. So I'm using the melon
baller to create an opening in each cucumber slice to create a little bowl or cup. And none of this
scooped cucumber will go to waste because I will put it on tonight's salad.
These have drained for about five minutes. So now I want to stir in some coarse salt
and some black pepper into the egg salad.
Then I need to have a taste with a fresh spoon.
Oh that's lovely now. Then you can start assembling the cups. You can transfer the
cups to a platter. And I very often will garnish the egg salad with tiny bits of pimiento. But
I think today I'm going to try using smoked paprika. Actually I'm almost out of smoked paprika
but one of you sent me this La Dalia sweet paprika. Let's give it a try.
I will loosely cover these cucumber cups and then pop them into the refrigerator.
But before I do that I actually want to make one of these just for myself.
Bon appetit.
These are lovely.
I'm going to cover this and pop it into the refrigerator.
So now the only thing left to do besides assembling the crostini is to make the charcuterie.
To build my charcuterie I'm adding three cheeses. Brie, Asiago, and blue cheese.
Then I'm including some of the gorgeous sweet potato hummus that you and I made together in
the previous video. To finish I'm adding salami, prosciutto, grapes, and an assortment of crackers.
Here's our charcuterie. I'm going to cover this loosely with cling film and I want the
cheeses to come to room temperature so they have their full flavor by serving time.
I almost forgot. I need a spoon for the hummus. Just putting it right on top. I'm going to bring
in some firewood and then we need to assemble the crostini and warm up the cocktail meatballs
and the sweet and sour dipping sauce. My spouse and I and our new friends Sam and Peter all enjoyed
this drinks and nibbles party. And because all of the food was made well ahead of time
I was able to relax and to be a guest at my own party. Thank you so much for watching.
I can't wait to see you next time.
