You can use many ingredients for tonjiru, for example potato, sweet potato, turnip, spinach and so on. Juicy and tender tonjiru goes well with crunchy vegetables. Pork 300 grams
Onion 300 grams
Salt 5 grams
Sake 50 grams
Water 1000 L
Kombu 5 grams
Garlic and ginger 7 grams each
Miso
Normal miso(Awairo miso) 70 grams
White miso(saikyo miso) 20 grams
Red miso(hachō miso) 5 grams
Carrot 50 grams
Daikon radish 120 grams
Burdock 30 grams
Konjac 50 grams
Japanese leek
Shichimi togarashi
