Today I'm going to show you one of the most luxurious recipes I've ever made. Tender beef fillets with a beautiful pink center, served with creamy black truffle mashed potatoes and a deeply aromatic red wine jus. The dish looks like it came from a fine dining restaurant, yet it's incredibly easy to cook at home. I make it this way because the combination of tender meat, creamy mashed potatoes, and the intense red wine sauce creates an unbelievable flavor.

In the video, you can see exactly how I season the fillets, sear them, baste them with butter and rosemary, and then finish them in the oven until perfectly cooked. The black truffle purée is incredibly soft and creamy and harmonizes perfectly with the dark jus. Finally, I add a golden Parmesan crisp to the plate, which gives the whole dish an elegant height and a sophisticated touch.

📋 INGREDIENTS:
For the filet mignon
• 4 beef fillets, 180 g each (6.3 oz each)
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp garlic powder
• 1 tbsp olive oil (1 tbsp olive oil)
• 1 tbsp butter
• 1 sprig of rosemary

For the black truffle potato puree
• 400 g floury potatoes (14 oz)
• 1 tbsp black truffle paste or truffle oil
• Warm cream
• 40 g butter (1.4 oz)
• Salt

For the red wine jus
• 150 ml red wine (5 oz)
• 80 ml beef broth (2.7 oz)
• 1 small shallot, finely chopped
• 1 tsp butter
• 1 tsp honey
• Salt

For the Parmesan Crisp
• 30 g freshly grated Parmesan cheese (1 oz)

To serve
• Microbes
• A few drops of truffle oil
• Coarse black pepper
