For the rolled sponge cake:

• 60 g flour
• 1 level tsp baking powder
• 200 g butternut squash puree (smooth and cooled)
• 30 g grated Parmesan (or Gruyère) cheese
• 1 tbsp 1 tablespoon olive oil
• Salt, pepper, nutmeg
For the goat cheese cream:
• 250g fresh goat cheese (such as Petit Billy or similar)
• 60g cream cheese (such as St Môret or Philadelphia)
• 1 small garlic clove, very finely grated
• 1 tablespoon chopped chives + 1 tablespoon chopped flat-leaf parsley
• 40g chopped walnuts
• Salt, pepper, a pinch of Espelette pepper (optional)
For the finishing touch:
• 80g cream cheese (leftover from the filling)
• 50g chopped roasted hazelnuts
• A few sprigs of fresh herbs (thyme, chives, etc.)
