
Easy Chinese Fish and Mushroom Soup to Serve with Noodles or Rice
This Chinese fish and mushroom soup only needs a few ingredients and so easy to make. I chose 3 kinds of mushrooms, shiitake, baby bella and button mushrooms. They all have earthy and umami taste while they taste differently. You may choose your own mushrooms. Cod fish is tender and flaky and works perfectly with the mushrooms. Enjoy!
Ingredients:
1 cod filet, cut into bite size and season with salt, white pepper and cooking wine
2 dry shiitake mushrooms (soaked for over 1 hour), sliced
2 baby bella mushrooms, sliced
2 button mushrooms, sliced
2 green onions, with white part sliced and the green chopped
a few slices of ginger
2 cloves garlic, sliced
salt
white pepper powder
chicken bouillon
Shaoxing cooking wine
avocado or vegetable oil
Written recipe for Fish and Mushroom Soup:
1. Heat up 1 tbsp oil on medium heat, and sauté green onions, ginger and garlic for about 20 seconds.
2. Turn up the heat to high, and stir fry mushrooms for about 1 minute.
3. Add the mushroom water and additional water (about 3 cups total), and bring the soup to boil.
4. Turn the heat to medium low, cover the soup, and simmer about 5 minutes.
5. Open the lid, and season the soup with salt and chicken bouillon.
6. Combine with fish, and cook about another 5 minutes.
7. Finish with white pepper and salt to taste. Garnish with green onions. Serve!
(for 2 to 3 servings)
