video. It's all free. Thank you. If life feels overwhelming to us today, take heart, God is with
us. Amen. Today I'm going to show you how to make desi chicken curry and here are the ingredients.
Here's the country chicken and I've got one and a half kilos of it. Here it's also called
organic chicken and in India they will call it desi murgi and for the rest of the ingredients
in this dekhi I've got 100 grams of mustard oil. You make this with mustard oil and I've got four
large onions that I've sliced and in here I've got seven cloves of garlic and I've got eight
cloves. I've got three big cardamom and I've got two cinnamon sticks and I've got six green
elaichi, that's a green cardamom and I've got around three bay leaves and I've got one teaspoon
of cumin seed and I've got three tablespoons of ginger garlic paste and I've got five green
chillies that I've sliced and for the masalas I've got half a teaspoon of hot chilli powder,
half a teaspoon of turmeric, half a teaspoon of jeera powder, that's cumin powder and I've got
one teaspoon of garam masala and I've got one and a half teaspoon of kashmiri mirch and one and a
half teaspoon of dhania powder and I've got three large tomatoes that I've chopped and we'll need
some green coriander and salt to taste. The very first thing we're going to do is make sure that
the mustard oil gets to smoking hot. As soon as it starts smoking we're going to turn the gas off
and wait for two minutes. After resting it for a couple of minutes I'm going to put the gas on
again and then the very first thing we're going to do is put the sliced garlic because the oil will
still be hot enough and then we're going to put the cumin seeds, the jeera powder and all the
garam masala and now we're going to put the onions. We're going to let the onion
get to golden in colour and then we'll put the chicken in. You can see my onions are golden
in colour now I'm going to add the chicken. Now that's the desi chicken I was talking about,
this is a little bit more expensive than the normal supermarket chicken but it's so much
more tastier. So it's already washed and pat dried so I'm just going to add that into it.
It's got the bones and everything because that gives the flavour to the curry.
I'm going to fry this chicken on a high flame for at least 45 minutes. The chicken has been
frying for at least four minutes now I'm going to add the salt to taste, say around
one and a half teaspoons and then I'm going to add the ginger garlic paste
and just a tiny bit of water so I don't waste the ginger garlic and now carry on frying the
chicken again with the ginger garlic for another four to five minutes till the rawness of the
ginger garlic goes. The ginger garlic has been frying in the chicken for the last four to five
minutes and now I'm going to add the green chillies and the rest of the all the dry
masala with the garam masala as well, everything in there and we'll also put the tomatoes
and I'm going to put just a quarter of the green coriander in there
and then I'm going to start frying it. Now I'm going to put the gas on a medium and then I'm
going to, my gas is on the medium, I'm going to keep frying this now and I'll put the lid on so
it'll melt the tomatoes and tomatoes will get nice and mushy so now we need to keep frying this
all the masalas with the chicken for at least 10 minutes from time to time keep stirring it but
keep the lid on. You can see my desi chicken's been frying now in the masala, it smells so delicious
and I've been stirring it from time to time and putting the lid back on again and this has had
10 minutes of frying and it's got a lovely colour now and the tomatoes are also mushy now
so now in this we add either warm water or hot water but not cold water
so I've already got hot water in the kettle. Now this desi chicken curry needs a little bit
extra gravy and also the chicken is quite tough so it takes longer to cook than the ordinary
supermarket chicken so make sure you've got enough gravy and I put enough to cover the chicken
and you can see it's boiling away so now I'm going to put the gas on medium and I'm going to put the
lid on and I'm going to let the chicken cook till the chicken is nice and tender I mean
depending on the chicken it should take at least 15 to 20 minutes but put the gas on medium
and put the lid on. My chicken's done now it's been cooking I put it on the back burner so it
had a medium flame you can still see it's rolling it still has a rolling boil and it's been cooking
for last 20 minutes and it's still got plenty of gravy in it so now's the time to add the green
coriander and give it a little stir and put the I'm going to put the gas on and now let it rest
and then we can serve it. That's our delicious desi chicken curry ready when I said I'm going
to put the gas on I meant actually I'm going to put the gas off when I put the green coriander
so now just before serving it you can see it's steaming away you can just put a little bit of
more coriander and this really is such a delicious dish and I hope you'll enjoy it.
